From Rog’s Cookbook: Fish from Head to Tail

In the Cooking Lab, we continue the workshop series From Rog’s Cookbook, dedicated to the basics of good and efficient cooking. Together, we prepare classic and iconic dishes and desserts, while learning the techniques that help dishes truly succeed.
This time, we will focus on one important cooking skill: proper fish preparation.
In Slovenia, we tend to eat too little fish, often because we are not entirely sure how to choose, clean, fillet and prepare it. As a result, we often buy fish that has already been cleaned or use only fillets, overlooking the full potential of the fish and limiting ourselves to just a few familiar species.
In this workshop, we will look at fish with fresh eyes and explore its sustainable use from head to tail.
We will learn how to:
- choose fish and recognise its freshness,
- clean fish safely and store it properly,
- fillet it in several ways,
- use the head, bones, skin, offal and other parts,
- prepare tasty, useful and thoughtful fish-based meals.
We will also discuss less obvious ways of using fish. Did you know that fish skin or even scales can be turned into crispy chips?
The workshop is practical and suitable for anyone who would like to become more confident in preparing fish and learn simple ways of using ingredients more fully and sustainably. No prior knowledge is required.
The workshop will take place on Tuesday, 27 October 2026, from 16:00 to 20:00 in the Cooking Lab.
About the mentor
The workshop will be led by Kristjan Bezgovšek, Cooking Lab mentor and chef at TaBar in Center Rog, Ljubljana. His work is based on carefully selected ingredients, precise techniques and a contemporary understanding of flavour.
Participants should gather in the entrance hall of Center Rog 15 minutes before the programme begins. Please store your personal belongings in the lockers indicated by the mentor. Do not be late, as this disrupts the working process. In case of late arrival, entry to the lab cannot be guaranteed.
The programme is held in Slovenian unless stated otherwise.
The programme is intended for participants aged 14 and above, unless stated otherwise.
In case of cancellation, you will be notified two days before the planned start of the programme.
If you are unable to attend the programme, the fee is non-refundable and the date cannot be changed. You may transfer your place to another person by notifying us at least 24 hours before the start at kuhanje@center-rog.si.
