The advanced course “Fermenting the Future” consists of three sessions that build on basic fermentation knowledge, focusing on advanced microbiological techniques, experimentation with homemade cultures, and zero-waste methods. Each session will be dedicated to preparing and customizing fermented non-alcoholic beverages (kombucha, water kefir, etc.), designing culinary recipes with both savory and sweet ferments, and deepening knowledge of sustainable urban preservation.

In a relaxed atmosphere of group exchange of cultures and experiences, all participants are welcome, including those who did not attend the introductory course. Participants will receive starter cultures, essential tools, and mentorship to independently advance fermentation protocols, create non-alcoholic desserts and dishes, and creatively incorporate fermented foods into everyday cooking.

Payment in two installments

Courses costing over €100 can be paid in two installments. Payment is possible at the Made in Rog shop or by bank transfer upon invoice if you contact us at tajnistvo@center-rog.si

About the Instructor:

The fermentation journey will be led by Tereza Poljanič, author of three cookbooks, host of the show Zdravo, Tereza, and founder of the brand Tereza's Choice. Tereza is a dedicated fermentation researcher who has honed her skills through years of independent learning and experimentation. She has also shared her unique expertise at the Michelin-starred restaurant Knystaforsen in Sweden, where she created exceptional non-alcoholic fermented combinations using fermentation and foraged wild plants and fruits, perfectly complementing gourmet dishes.

Participants should gather 15 minutes before the scheduled start time in the entrance hall of Center Rog. Please store your personal belongings in the lockers, which the mentor will show you. Please be on time, as late arrivals disrupt the workflow. In the case of a delay, entry to the lab cannot be guaranteed.

The program will be conducted in Slovenian unless stated otherwise.

The program is intended for participants older than 14 years, except where noted otherwise.

In case of cancellation, you will be notified two days before the scheduled start.

If you are unable to attend the program, the registration fee is non-refundable, and it is not possible to change the date. You can transfer your participation to another person, but please notify us at least 24 hours before the program begins at the email address: kuhanje@center-rog.si
