Rog's World Flavours: Mexico

Rog’s World Flavours is a series of culinary workshops dedicated to exploring the cuisines of different countries around the world. Each workshop presents one country through its culinary traditions, characteristic ingredients, recipes and the stories of the people who keep these traditions alive.
In the workshop Rog’s World Flavours: Mexico, we will explore the vibrant world of Mexican street food. We will discover how simple ingredients such as corn, wheat, vegetables, herbs, spices and fresh sauces come together in dishes full of colour, texture and flavour.
Together, we will make corn and wheat tortillas from scratch, which we will use to prepare tacos and quesadillas. We will try different traditional fillings and prepare classic Mexican sauces such as guacamole, pico de gallo and salsa verde. Along the way, we will learn how flavours are built in Mexican cooking — through freshness, acidity, heat, herbs and good basic ingredients.
The workshop is suitable both for beginners and for those who already enjoy cooking and would like to expand their repertoire. In addition to hands-on cooking, we will also learn about the background of Mexican street food and discover why it plays such an important role in everyday life, social gatherings and Mexico’s culinary identity.
All the recipes can easily be prepared at home, so after the workshop you will be able to share the authentic flavours of Mexico with friends and family.
The programme will be held in English. No prior knowledge is required.
About the mentor
Valeria Citterer is a visual artist from Venezuela, a member of the Mladi Rog programme and a mentor of culinary workshops at Center Rog. In her work, she connects food, ceramics and visual art, exploring how cuisine can create community, preserve cultural memory and bring together people from different cultures.

Participants should gather 15 minutes before the start of the programme in the entrance lobby of Center Rog. Please store personal belongings in the lockers that will be shown to you by the mentor. Please arrive on time, as late entry into the lab cannot be guaranteed due to disruption of the working process.
The programme is intended for participants aged 14 and above unless otherwise stated.
In case of cancellation, you will be notified two days before the scheduled start.
If you are unable to attend, fees are non-refundable and the date cannot be changed. Participation may be transferred to another person, provided you inform us at least 24 hours before the start at kuhanje@center-rog.si.
