In the Cooking Lab, we are launching a new workshop series, Cook Once, Eat Several Times, where we will explore how meal prep can make everyday life easier, help us organise our time better and reduce the stress of wondering: “What should I cook today?”

We will learn how to use simple, accessible and seasonal ingredients to prepare several tasty, nourishing and balanced dishes that can be stored in the fridge or freezer and used later. This way, we can reduce the need for daily cooking, save money and waste less food.

In the first workshop, we will show how seasonal vegetables such as zucchini and tomatoes can be turned into varied meals for several days. Together, we will prepare:

  • a Mediterranean stew with zucchini, tomatoes and chickpeas;
  • creamy hummus with roasted zucchini and cherry tomatoes;
  • moist chocolate muffins with a hidden ingredient — zucchini.

In all the dishes, we will also use chickpeas as an excellent plant-based source of protein and fibre. Along the way, we will learn how to create a balanced meal that is filling, practical to store and still tastes good the next day.

The workshop is intended for anyone who wants to cook more thoughtfully, make better use of seasonal produce and take home ideas for simple everyday recipes.

About the mentor
The workshop will be led by Tjaša Ribič, a graduate dietitian, culinary content creator and lover of plant-based cooking. In her work, she combines nutritional knowledge with practical cooking experience and inspires people to prepare tasty, balanced and simple plant-based dishes. During the workshop, she will share useful cooking tips, nutrition advice and recipes that you can easily include in your everyday routine.
