Beef prepared two ways

Join us for a workshop where we’ll explore the world of beef and learn how to use every fiber—no waste, full of flavor, and plenty of knowledge.
In two hands-on sessions, we will prepare two premium beef cuts: tenderloin and striploin steak. We’ll learn how to understand, process, and bring out the best in the meat—whether at home or for a special dinner.
First, we’ll prepare steak tartare by hand-chopping, seasoning, and emulsifying the meat to perfect balance. Next, we’ll cook a double filet (chateaubriand), mastering the technique for roasting large cuts of beef. To finish, we’ll make classic French pepper sauce like the best restaurants.
In the second part, we’ll focus on the striploin steak, one of the juiciest beef cuts. We’ll learn to perfectly sear it on a cast-iron pan and serve it with chimichurri sauce, balancing acidity, freshness, and spice. As a side, we’ll make French mashed potatoes with over 30% butter—so smooth it melts in your mouth.

About the mentor:
The workshop is led by Darko Krstev, a trained chef and sous-chef at Gostilna Strelec, who also teaches cooking at the Ljubljana School of Hospitality and Tourism.
