Pastry Masterclass: Monoportion Desserts in Fruit Form (in Slovenian)

We will step into the world of contemporary patisserie, where advanced techniques meet refined aesthetics. In this intensive two-day masterclass, we will create two exceptional single-portion desserts step by step: one shaped like a blueberry and the other like a pear. Both desserts feature a sophisticated balance of flavors, flawless textures, and a visually striking finish.
The course is practice-oriented, meaning we will prepare the desserts ourselves—from the first component to the final glaze. With continuous guidance from the mentor, we will gradually develop an understanding of ingredients, techniques, and the aesthetic approach that defines high-end pastry.
Everyone who wants to upgrade their skills and take their desserts to the next level is welcome. The course is suitable for both beginners and experienced pastry chefs, as our expert mentoring team will guide us step by step through the specific process of creating fruit-shaped desserts.
What We Will Learn:
During the workshop, we will master key techniques of modern pastry making:
- preparing a light and stable mousse,
- creating a perfect ganache montée without splitting,
- crafting aromatic inserts with rich, natural flavors,
- making and using different bases (sponge, crumble),
- achieving natural color effects with velvet spray and colored sprays,
- shaping monoporcijski desserts that resemble small works of art,
- harmonizing all components into a balanced, high-end dessert.
The masterclass will take place in a small group, allowing for in-depth learning and individual support. By the end of the course, we will understand the full process of creating fruit-shaped monoporcijski desserts and will be able to prepare them independently at home.
Each participant will take home 5 of their own desserts, while the remaining ones will be enjoyed together during a guided tasting and discussion. Refreshments will be provided during the workshop, and at the end we will receive a certificate of completion.

About the Mentors
The masterclass will be led by Sandi Planinšek and Eva Klinc from SugarQueen Academy.
Sandi Planinšek is a pastry chef, mentor, and co-founder of SugarQueen Academy and the D’Qualia brand. He combines tradition with innovation and is known for his deep understanding of flavors, textures, and processes. He refined his skills under world-renowned pastry chefs such as Amaury Guichon, Ksenia Penkina, and Kirsten Tibbals. His work is defined by technical precision and creative boldness.
Eva Klinc is an artist, pastry chef, and founder of SugarQueen Academy, as well as co-founder of D’Qualia. With a background in visual arts and culinary aesthetics, she creates desserts as expressions of personal storytelling. She has received multiple international awards in artistic pastry and is recognized for her hyper-realistic cakes exhibited across Europe.

Participants should gather 15 minutes before the start of the programme in the entrance lobby of Center Rog. Please store personal belongings in the lockers that will be shown to you by the mentor. Please arrive on time, as late entry into the lab cannot be guaranteed due to disruption of the working process.
The programme is conducted in Slovenian unless otherwise stated.
The programme is intended for participants aged 14 and above unless otherwise stated.
In case of cancellation, you will be notified two days before the scheduled start.
If you are unable to attend, fees are non-refundable and the date cannot be changed. Participation may be transferred to another person, provided you inform us at least 24 hours before the start at kuhanje@center-rog.si.
