This time, the theme is fermentation. The fermentation process is an essential part of many delicious foods we enjoy today—whether it’s your traditional Slovenian sauerkraut, a refreshing kombucha drink, or a soft, cloud-like sourdough bread loaf. But it doesn’t stop there—fermentation plays a key role in the future of our food systems, enabling the development of new food ingredients, more sustainable production, and higher nutritional value.
