Discover the world of Japanese culinary arts with a unique program of three cooking sessions, designed for anyone who wants to understand and experience the authentic flavors and techniques of the Far East. The program combines practical experience, cultural context, and accessibility – suitable for curious beginners as well as cooking enthusiasts looking to expand their culinary knowledge.

On the first session, the focus will be on the basics: preparing perfect rice, traditional dashi, miso soup, tamagoyaki (Japanese omelette), and classic pickled side dishes. You will learn the structure of a Japanese meal, key ingredients and techniques, develop skills in aesthetic plating, and learn the culinary rules that shape everyday Japanese dining. Fun fact: tamagoyaki is traditionally used as a test of skill for young sushi chefs.

The second session will focus on the world of sushi and cold appetizers. You will prepare sushi rice and make temaki, maki, and nigiri, as well as popular snacks like gyoza dumplings and goma-ae. You will learn how to prepare these dishes at home, understand the techniques, and assemble balanced bites. Fun fact: sushi was once a fermented dish – fish was preserved in rice for extended periods.

In the third session, you will explore Japanese “comfort food” dishes: hand-knead and cut udon noodles, prepare chicken oyakodon, and assemble your own bento box with onigiri and side dishes. You will gain a sense of preparing noodles, one-pot meals, and visually arranging bento meals.

The entire course offers a comprehensive insight into the tradition, techniques, and creativity of Japanese cuisine and encourages relaxed experimentation with ingredients that are accessible locally.

Prior knowledge is not required.
