Basics of Sourdough Bread Baking (in Slovenian)

Baking with sourdough is becoming increasingly popular. But how do you cultivate your own starter and what should you pay attention to when baking bread? Join us in the cooking lab, where we will learn how to prepare a sourdough starter, knead the dough, shape the bread, and properly proof and bake it. We will prepare three types of bread: a "Batard" loaf proofed in a rattan basket, a seeded rye bread in a baking mold, and focaccia baked on a tray. We will also share tips and tricks for baking and demonstrate the “stretch and fold” technique for developing strong dough.
What will we do?
1st session:
We will prepare a sourdough starter, which you will take home and use for further baking adventures. We will knead the dough for the "Batard" loaf, seeded bread, and focaccia. We will learn the technique for developing dough strength called “Stretch & Fold”. The dough will then proof in the refrigerator until the next day.
2nd session:
The proofed dough will be shaped into loaves and prepared for the second proofing. The seeded bread will be baked and tasted.
3rd session:
The focaccia will be brushed with oil, dimpled with fingers, sprinkled with coarse salt, and baked. The loaf will be turned out of the basket, scored with a bread lame, and baked. We will also prepare toppings for the focaccia and herb butter for the bread.

- Friday, January 30, 2026, from 17:00 to 20:00
- Saturday, January 31, 2026, from 14:00 to 17:00

About the mentor
The course will be led by Juš Mejaš, master of home baking, with years of experience at Pekarna Osem in Ljubljana. Before working at the bakery, he began baking at home, and through extensive practice and failed breads, he improved his knowledge and sense of dough, which he then refined at Pekarna Osem. He now shares this knowledge through workshops at Center Rog.

The participants should gather 15 minutes before the start of the program in the entrance hall of Center Rog. Please store your personal belongings in the lockers, which your mentor will show you. Do not be late for the program, as this disrupts the workflow. In case of tardiness, entry into the lab unfortunately cannot be guaranteed.
The program will be conducted in Slovenian, unless otherwise stated.
The program is intended for participants aged 14 and older, unless otherwise specified.
In case of cancellation, we will notify you two days before the planned start.
If you cannot attend the program, the fee is non-refundable and rescheduling is not possible. You may transfer your participation to another person, provided you notify us at least 24 hours in advance at kuhanje@center-rog.si
